Premium Australian cuts, flame-kissed over open heat and seared to smoky perfection. The finest steaks in the country, treated with the love they deserve.
Freshly shucked oysters, grilled lobster, Glacier 51 toothfish - the ocean's finest, cooked with finesse and plated with precision.
A carefully curated wine list and handcrafted cocktails - designed by a bar chef and poured by people magnificently obsessed with what they do.
Over a century of history lives within the walls of 87 Rokeby Road. Today, that legacy has found new life as The Embassy by Devlins - where the past and present sit comfortably together, felt in the warmth of its walls, the character of its spaces, and the people who bring it to life.
“It’s damn hard to find any fault with the steak.” So wrote Simone Grogan of The West Australian, awarding The Embassy 18/20. Chef Charlie Vargas’s Black Onyx Tomahawk, flame grilled and carved to share - a signature dish Perth diners return for, time and time again.
Our Story
Subiaco's best kept secret tucked behind The Embassy is The Foreign Office Bar - the perfect place where the evening starts or refuses to end.
Barrel-vaulted ceilings, Perth's longest marble communal table and city maps from around the world. The Foreign Office is where diplomacy happens - over a Champagne, a rare whisky, or one of Sean Walker's signature cocktails like the Wagyu-fat infused bourbon.
Food, Beverages, Events. No reservations required. Find the door at 20 Rowland Street.
A graduate of the Culinary Institute of America. Joint winner of Best Head Chef at the 2025 AHA & Coca-Cola Hospitality Awards for Excellence.
Before The Embassy, Chef Charlie built his reputation across Perth’s most respected dining rooms - Fraser’s, Balthazar, and the Sneakers & Jeans group. He leads his kitchen with calmness and conviction, fostering a culture where mentorship and mastery are equally valued.
His signature dishes include the Salt Bush high marble South Australian lamb with a black garlic emulsion and his world famous New York baked vanilla cheesecake.
Our menus reflect only the best of Australian produce - local, seasonal, considered and beautifully executed. From starters to mains through to dessert, every course is given great attention to maximise the sensory experience.
